  1. Prepare 1/2 cup bottle gourd
  2. Prepare 1/2 cup snake gourd
  3. Make ready 1/2 cup radish
  4. Make ready 1/2 cup pumpkin
  5. Get 1/2 cup chow chow (chayote squash)
  6. Prepare 1 onion
  7. Prepare 1/4 cup grated coconut
  8. Prepare 2 teaspoon (1+1 for grinding and for temper) cumin seeds
  9. Get 1 teaspoon mustard seeds
  10. Prepare 1 tablespoon coconut oil
  11. Get 3/4 cup milk(full fat milk)
  12. Prepare 2 green chillies
  13. Take 1 dry chilli
  14. Prepare 3 sprig curry leaves
  15. Prepare 1/2 teaspoon salt or to taste

Kootu is an integral part of a meal in most south Indian households. Add in all veggies and salt. Now add a splash of water and cover with a lid. Now add in cooked dal, coconut masala, turmeric powder and mix well.

Instructions to make Mixed Summer Vegetable Paal(Milk) Kootu:
  1. Chop all the vegetables into equal sizes as shown.
  2. Boil 2 cup of water and to it add chopped chow chow (chayote squash) and radish. Add 3/4 teaspoon cumin to it. Let it cook for 5 minutes on medium heat.
  3. Vegetables should be cooked well and firm not mushy.
  4. Now add chopped pumpkin,snake gourd and bottle gourd to the boiling vegetables. Let it cook until all the vegetables are well cooked.
  5. In a mixer, grind grated coconut, green chillies and cumin to a fine paste. Add the coconut paste to the boiled vegetables.
  6. Add salt to taste and gently mix. Add full fat milk to it and let it cook for 4 to 5 minutes. Switch off the heat.
  7. In a pan add coconut oil on a medium heat. Add mustard seeds and cumin seeds and let it splutter. To it add chopped onion and dry chilli.Saute till Onion is translucent. Finally add curry leaves and add to the boiled Paal kootu. Gently mix the Paal kootu and transfer it to a serving dish.
  8. Serve Summer Vegetable Paal Kootu with steamed hot rice. Simple and easy Paal kootu is a soothing dish for this scorching heat.

Now add a splash of water and cover with a lid. Now add in cooked dal, coconut masala, turmeric powder and mix well. The kitchen smelt remarkably delicious with warm aromatic flavors while cooking today's recipe, mixed vegetable kootu. The reason for the wonderful aroma were the roasted spices and lentils - asafoetida, cinnamon, bengal gram and poppy seeds that were ground to a paste with fresh coconut forming the masala base of the kootu.
