The ingredients needed to make Low Fat Cran-Blueberry Muffins:
  1. Prepare 2 cup all-purpose flour
  2. Prepare 1/2 cup granulated sugar

  9. Take 1/2 cup fresh blueberries washed and gently dried (may use frozen, thaw first, but fresh is best)

  11. Get 2 tsp additional sugar
  12. Get 1/4 tsp ground cinnamon
  13. Prepare non-food
  14. Make ready 12 paper muffin tin liners
Steps to make Low Fat Cran-Blueberry Muffins:
  1. Preheat oven to 400°F and place one paper liner per well in a muffin tin.
  2. In a medium bowl place the flour, sugar, salt and baking powder. Stir to combine.
  3. Add applesauce, milk and vanilla. Stir until just incorporated.
  4. Gently fold in cranberries and blueberries.
  5. Fill paper lined muffin cups evenly until all batter is used, a little over 3/4 full each. Mix additional sugar and cinnamon in a small bowl and sprinkle on top of batter in each cup if desired.
  6. Bake in pre-heated oven 20-25 minutes or until golden and a toothpick inserted in the center comes out clean. Do not over-Bake or they will be dry.
  7. Remove from oven. Let cool in muffin tin for 10 minutes. Remove muffins from tin and place on wire rack to cool completely. Eat and enjoy a "better for you" muffin!
  8. NOTE: If you would like to enjoy these warm you will have to spray your paper liners with cooking spray. Due to the lack of oil they tend to stick to the liners while still warm. They sometimes stick when cool as well, so spraying anyway may be desired. Although this does add a trivial amount of oil. They always come clean out of the paper on day two without spray, for some crazy reason. Lol. You can also spray your muffin tin directly instead of using paper liners.

Make a trail mix from seeds and/or nuts. Your mood can be elevated by consuming peanuts, almonds, cashews, sunflower seeds, pumpkin seeds, etcetera. This is possible because these foods are high in magnesium which increases your production of serotonin. Serotonin is a feel-good chemical substance that directs the brain how to feel at any given moment. The more you have of it, the more pleasant you will feel. Not just that but nuts, in particular, are a terrific protein source.

If you want to beat depression, try consuming some cold water fish. Salmon, herring, tuna, mackerel, trout, etc, they’re all chock-full of omega-3 and DHA. These are two things that truly help the grey matter in your brain work a lot better. It’s true: consuming a tuna fish sandwich can seriously raise your mood.

It’s easy to drive away your bad mood when you are eating grains. Barley, millet, quinoa, etc are excellent at helping you be happier. They help you feel full too which can really help to improve your mood. Feeling hungry can really make you feel awful! The reason these grains are so great for your mood is that they are not hard for your stomach to digest. They are easier to digest than other foods which helps bring up your blood sugar levels and that, in turn, elevates your mood.

Green tea is wonderful for moods. You were just waiting to read that, weren’t you? Green tea is loaded with an amino acid called L-theanine. Studies prove that this particular amino acid can essentially stimulate brain waves. This helps better your mental focus while relaxing the rest of your body. You knew that green tea helps you become a lot healthier. And now you are aware that it can help you be happier as well!
